They should know what they're doing since they're selling about 20 tonnes of Bluefin Tuna every month in Japan.
The trimming is not super perfect (pieces are slightly different sizes) but that's only because this tuna house is trying to keep the best parts for you, and keep it affordable.
So what if the pieces are not exactly the same size? Especially if it tastes this good!
